Something else to remember....when you stop your AI...or TRT for that matter....your E “rebounds“.
So pulling labs two weeks after stopping your AI might have just been a brief spike as you body needs time to adjust to the new norm.
Depending on your SHBG level, running a higher E2 maybe fine...
For me it did not keep it from getting elevated, but the symptoms were not there.
The high SHBG keeps the free E lower just like it keeps free T lower.

I was on 210mg a week plus 500 of HCG No AI....I respond very badly to AI.
I have pretty high SHBG so it kept my E2 in check.

I am 50 and my current natural (I am not currently on TRT) TT is just shy of 600. But....my SHBG is 70+ so my free T is only around 9.
When I was in my mid 30’s my TT was 750+. Never checked free T back in those days or SHBG for that matter.
Each time I restarted TRT it was due to the DR(s) assuring me that this protocol will work for me.

Because you are truly flying blind. You have no real knowledge of your blood levels so you can not say for certain that your issues stem from low T.
At your age I doubt you’re actually suffering from low T.

One of the reasons I stopped TRT was the decreased volume and force when cumming.
When I am not on a TRT, my loads are large and lots of force. TRT takes that down to a very small amount that just dribbles out.
