Hemoglobin and Hematocrit Went Up After Donation

How’s this even possible. On the day of blood donation my finger prick hemoglobin was 17.9. Now these things are notoriously over estimating. Every previous donation finger prick test had me at 19 or 20 which was higher then reality. So this 17.9 should also be higher then reality.
Well 8 days after donating blood I did a blood test fully super hydrated and my hemoglobin was 18.4 and hematocrit 54. How’s this possible? I usually drop about 10% on each after a donation.
 
But how wrong can actual blood tests be? I just don’t believe I donated 488 ml of blood and I had an increase or at best no change at all. I did take iron after the donation but I can’t imagine iron pills restored all my hemoglobin in 8 days.
