I'm constantly in here meal prepping, and I think I’ve got making my breakfast down to a science — I can do it in less than seven minutes. I even time myself in the morning to see how fast I can make it! However, today is one of those days where I get to make something I really enjoy. If you follow me, you know I love sweets, and peanut butter is one of my favorite things!

I’m guessing you love peanut butter too, or you wouldn’t be here! Today, I’m going to show you how to make something that tastes amazing and is healthy: protein peanut butter cookies. This recipe is super easy to make, and I promise you these cookies will taste better than any protein cookies you could buy at the gym.

First, you’ll need a food scale, mixing bowl, and a spoon. I know, that sounds really high-tech, right? Before you start, preheat your oven to 350 degrees. Now, let’s get the ingredients into the mixing bowl. We’re going to start with 64 grams of PB Fit powder, 85 grams of fat-free Greek yogurt, and 35 grams of water. Mix this all together really well until it looks like this.

Now, let’s add 32 grams of chocolate protein powder. I like using ON Nutrition Gold Standard Whey because it tastes good and mixes well—no, I’m not sponsored, but if they want to call me, they can! Add 14 grams of coconut flour, 10 grams of zero-calorie Splenda, 21 grams of Cary’s sugar-free low-calorie syrup, and finally, 3 grams of baking powder. Now, mix everything together thoroughly. You want the consistency to look like this, and you can even taste the batter — I bet you’ll love it!

Now that we’ve mixed everything, it’s time to bake! Grab your baking sheet, cover it with foil, and spray it down with non-stick spray. I like to make three big cookies, but you can make them any size you want. Take a big scoop, use another spoon to push it off, and flatten it out a bit. It may get messy, but it should look like this when you're done.

Now that all three cookies are on the pan, slide them into the oven on the middle rack and bake for seven minutes. Ding! Seven minutes are up. Time to take them out and see how they turned out. Not too bad, right? They look so good, and they smell even better! Now, let’s transfer them to a cookie sheet to cool down, so they’ll be ready to eat.

Here’s the real test—it’s time to take a bite and see if this batch is any good. There you go, nice and fluffy, just the way I like them. Yum! Excuse me, I’m still swallowing. I swear, these are better than any protein cookies I could ever buy at the gym. And here’s the kicker: these three cookies have 69.5 grams of protein, 40 grams of carbs, and 11.5 grams of fat. I could practically eat these as a meal!

How about this Nelson, protein waffles. Mix waffles with your usual complete pancake mix directions. I also add 1 egg and 1 scoop of whey isolate

1 cup complete pancake mix
1 cup water
1 egg
1 tbsp avacado oil (any oil)
1 scoop whey protein isolate

We have a small waffle iron about the size of an Ego waffle. I can get 8-9 waffles out of this mix.
